Training Course on ‘Advanced Halal Food Processing Techniques: Ensuring Safety and Quality’

Within the framework of SESRIC Halal Capacity Building Programme and in collaboration with the Malaysian Agricultural Research and Development Institute (MARDI), SESRIC, co-organised a Training Course on “Advanced Halal Food Processing Techniques: Ensuring Safety and Quality” on 19-20 February 2025 via online video conferencing platform.

The training course was organized in coordination with the Standards and Metrology Institute for Islamic Countries (SMIIC) and Islamic Organization for Food Security (IOFS) in line with the 8th Annual Coordination Meeting of the OIC Institutions (ACMOI). An expert from SMIIC delivered a presentation on “Advanced Halal Food Processing Techniques: Halal Critical Points and Standardization.” 183 professionals from relevant ministries and institutions across 28 OIC Member Countries benefited from the training.

The primary objective of the course was to strengthen the technical capabilities of professionals in OIC countries involved in the halal food sector. It introduced advanced methodologies and techniques that ensure both safety and quality, while strictly maintaining halal standards. The 2-day course covered the following essential topics:

  • Food processing and handling efficiency to ensure the integrity of halal food products
  • Halal challenges in fermentation and traditional food products
  • Emerging technologies in the halal food industry
  • Methodologies for improving halal compliance, including detecting porcine DNA in food
  • DNA analysis to authenticate food products
  • Advanced halal food processing techniques: Identifying critical halal points and standardization

The course underscored the critical role of halal food certification in building consumer trust and highlighted the work of SMIIC in setting global halal food standards. Strategies to enhance food handling and distribution in alignment with these international standards were also discussed. Key challenges in obtaining halal certification, maintaining product quality, and advancing the halal sector’s market development were explored in-depth.
